 Yields 1 Serving of 1 ½ cups
Ingredients:
2 Cups spinach leaves, tighly packed ½ Apple, peeled and chopped ½ Cup water, plus ¼ cup water to thin, if neccessary 1 Teaspoon fresh lemon juice Dash of salt ½ Ripe avocado, chopped
Instructions:
- Place the spinach, apple, water, lemon juice, and salt in a blender and process until smooth. Add the avocado and process until smooth.
- Add remianing 1/4 cup water to thin, if neccessary, and blend briefly. Serve immediately. For a chilled soup, refridgerate for 2 hours before serving.
