Herb-Infused Roasted Potatoes PDF Print E-mail


Yields 6 Servings

Ingredients:

2 Pounds red potatoes (about 16)
3 Sprigs rosemary
2 Sprigs sage
1 Sprig fennel
2 Bay leaves
2 Sprigs parsley
3 Sprigs oregano
2 Sprigs basil
1 Teaspoon coarse sea salt or table salt

Instructions:

  1. Preheat the oven to 400 degrees F. 
  2. Place a layer of the potatoes in a 2-quart baking dish. Top with a layer of the rosemary, sage, fennel, bay leaf, parsley, oregano, basil, and sprinkle of the salt. Repeat to make 1 or 2 layers and to use all the potatoes, herbs and salt. Cover lightly.
  3. Roast for 1 ¼ hours or until the potatoes are tender when pierced with a fork. Remove the bay leaves before serving.
