Shitake Salad PDF Print E-mail

Shitake Mushrooms have been used medicinally in Asian cultures for years to enhance health. In our salad, they offer a vital source of rich minerals and protein. Enoki mushrooms are another key ingredient that stimulates the immune system and its antiviral.

This salad is quick and easy to make and pairs fabulously with our Asian infusion pasta, Thai Spring Rolls, and Curry cones.

Salad Ingredients:

  • 6 cups herb-salad mixed greens
  • 1 cup enoki mushrooms, de-stemmed and rinsed
  • 6 large shitake mushrooms, de-stemmed and rinsed
  • 1/8 cup fresh stemmed cilantro
  • 1 hothouse cucumber, julienned
  • ¼ cup chopped green onions
  • 2 large Hass avocados, diced.

Salad Dressing Ingredients:

  • 8 oz. cold-pressed extra-virgin olive oil
  • 4 oz fresh lemon juice
  • 1 Tbsp. miso paste
  • 1 Tbsp. stone-ground mustard
  • 1 clove garlic
  • 1 tsp. agave nectar
  • 1 dash cayenne pepper
  • 1 inch green onion

Dressing Preparation:

Blend well and chill until ready for use. This dressing will keep 10 days in the refrigerator.

Makes 2 cups.

Salad Preparation:

Slice shiitake mushrooms lengthwise into ¼ inch-thick pieces. Add 2 Tbsp salad dressing, and toss well so that all mushrooms are well coated. Add mixed greens, avocado, cilantro, green onions, and cucumber. Toss well. For serving, split into equal portions and top with enoki mushrooms; garnish with additional cilantro and green onions for an extra-spicy bitel.

Makes 4 servings.
