Spicy Glazed Snacking Cake PDF Print E-mail

Cake Ingredients:

1 ¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground cloves
1/8 teaspoon ground nutmeg
¾ cup buttermilk
2/3 cup packed brown sugar
¼ cup applesauce
1 egg white
3 Tablespoon canola oil
1 teaspoon vanilla extract

Glaze Ingredients:

¾ cup confectioners’ sugar
½ teaspoon ground ginger
¼ teaspoon ground cinnamon
1 teaspoon honey
4 teaspoon apple juice or water
½ teaspoon vanilla extract

Cake Instructions:

  1. Preheat the oven to 350°F. Coat an 8” x 8” nonstick baking dish with cooking spray and set aside.
  2. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, cloves, and nutmeg.
  3. In a large bowl, combine the buttermilk, sugar, applesauce, egg white, oil and vanilla extract. Add the flour mixture and stir until just combined.
  4. Spoon the batter into the prepared dish and smooth it evenly. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.  Cool on a wire rack for 10 to 15 minutes.

Glaze Instructions:

  1. Sift the confectioners’ sugar into a medium bowl. Stir in the ginger and cinnamon.  Add the honey, apple juice, and vanilla extract.  Stir until smooth.
  2. Drizzle the glaze over the top of the cooled cake and spread it evenly over the surface.
