Spicy Glazed Snacking Cake |

Cake Ingredients:
1 ¾ cup all-purpose flour 1 teaspoon baking powder ½ teaspoon baking soda 1 teaspoon ground cinnamon 1 teaspoon ground ginger ¼ teaspoon ground cloves 1/8 teaspoon ground nutmeg ¾ cup buttermilk 2/3 cup packed brown sugar ¼ cup applesauce 1 egg white 3 Tablespoon canola oil 1 teaspoon vanilla extract
Glaze Ingredients:
¾ cup confectioners’ sugar ½ teaspoon ground ginger ¼ teaspoon ground cinnamon 1 teaspoon honey 4 teaspoon apple juice or water ½ teaspoon vanilla extract
Cake Instructions:
- Preheat the oven to 350°F. Coat an 8” x 8” nonstick baking dish with cooking spray and set aside.
- In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, cloves, and nutmeg.
- In a large bowl, combine the buttermilk, sugar, applesauce, egg white, oil and vanilla extract. Add the flour mixture and stir until just combined.
- Spoon the batter into the prepared dish and smooth it evenly. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 10 to 15 minutes.
Glaze Instructions:
- Sift the confectioners’ sugar into a medium bowl. Stir in the ginger and cinnamon. Add the honey, apple juice, and vanilla extract. Stir until smooth.
- Drizzle the glaze over the top of the cooled cake and spread it evenly over the surface.
