Apple Herb Omelette

Yields 2 servings

Ingredients

2 ½ Tablespoons butter
2 Medium tart apples, peeled, cored and diced
1 Tablespoon lemon juice
1 Small onion, finely diced
¼ Teaspoon dried thyme
4 Eggs, beaten
½ Teaspoon salt

Instructions
  1. Sprinkle lemon juice over diced apples. Combine apple and onion. Saute for several minutes in a small skillet. 
  2. In another medium-sized skillet melt butter. Combine salt and beaten eggs and pour into hot skillet with butter. Keep heat low. Let egg mixture cook, lifting edges with spatula to allow the uncooked egg on top to run onto the skillet surface. 
  3. When entire egg mixture is lightly cooked, sprinkle apple-onion mixture on the omelette. Fold omelette over and serve.
