Yields 1 quart
Ingredients:
1 4-inch piece ginger 2 cups boiling water 6 teaspoons honey, or to taste ½ cup freshly squeezed lemon juice 1½ cups carbonated mineral water
Instructions:
Peel and slice ginger. Combine with boiling water; let stand for 10 minutes, then discard ginger. Cool. Add honey and lemon juice; mix well. Pour into glasses and add mineral water. Serve over ice.
