Yields 2 Servings
Ingredients:
½ cup light coconut milk 1 cup rice milk ½ cup pineapple or pineapple-orange juice 1 cup frozen and slightly thawed mango chunks 2-3 tablespoons plain or vanilla whey protein powder 2 tablespoons coconut flakes, for garnish whole mint leaves, for garnish
Instructions:
Combine coconut milk, rice milk, juice, and mango chunks in a blender and puree until smooth. Add whey protein powder and puree again until very smooth. Pour into glasses. Garnish with coconut flakes and mint, if desired. Serve immediately.
*Modifications- Add a serving of Pura Green to get extra nutritional value.
